Soft, Chewy and Yummy Oatmeal Cookies in 45 minutes!

You know all those cookies (and a glass of milk) you see in those ‘oyinbo’ movies? You can bake them on your own!

I only recently took to baking and so far I have successfully (almost successfully) made-chocolate chip cookies, Butter Cookies and now Oatmeal Cookies (which is my favourite).

You can have your cookies in two ways depending on your preference- thin, crispy and crunchy or soft,fluffy and chewy.

I love the latter because that’s the best way for me to really taste and savour all the flavors and ingredients that went into the cookies plus it saves my teeth the hard work 😂

When done, my cookies are crispy/crunchy at the edges but chewy in the center.

Let’s get down to business.

You will need:

1 and 1/2 cups flour

2 and 1/2 cups oats

1tsp vanilla

1 tsp cinnamon

1/2 tsp salt

1/2 tsp baking soda

2 eggs

1 cup butter

1/2 cup white sugar

1 cup brown sugar

What you need.

How to:

Using a mixer or spatula, cream Butter and Sugar in a bowl.

After a while, add eggs to the mixture one at a time.

Add vanilla- mix thoroughly (but don’t overmix) and set aside.

In a separate bowl, pour in flour, cinnamon (I love cinnamon so I go overboard with it), baking soda. and salt.

Mix dry ingredients well and turn into the wet ingredients.

Add oats and carefully fold in all ingredients so it incorporates well.

Once dough is ready, chill for about 30 minutes.

While you are doing all of this, please turn in the oven to start warming up.

After dough is chilled, distribute evenly on baking sheet, The size of the dough determines how big your cookies come out.

Place tray in oven and bake for 20-25 minutes depending on the type of oven and whether you want it crispy or chewy,

For chewy cookies, you don’t need to wait for the top to be exactly firm before bringing them out. The top will look slightly undone, but that’s fine it will firm up a bit once cooled.

After baking, bring out tray and let it cool for about 10-15 minutes.

Voila! Your cookies are ready to be enjoyed with a tall glass of milk or drink of your choice! You can keep the rest in an airtight container to snack on whenever you want 😃😃
